Japanese cartoons are not like the western. In Japan they take more seriously the cartoon medium. Since some years I'm a big fan of Japanese 'anime' as in jargon. Time for a top 10 record.
Anime is characterized by a very specific font style is instantly recognizable. The characters have exaggerated features like big eyes and weird colored hair. This phenomenon has its roots in the Japanese also look at westerners. When we were there ever in our VOC ships on the coast appeared, the image is arise in what is now the manga and anime's to see.
Honor, sacrifice and loneliness are many recurring themes. Violence and exposure is generally not shunned. Since pictures speak louder than words I will each title shall be accompanied by a little clip.
Trigun

Vision of Escaflowne
This anime has an authentic atmosphere and fantasy is beautifully animated. Knights in large robots engage the enemy, you just have to come. And it's pretty convincing. Special mention for the bad-guy in this series (Dilandau), which character has flipped such that you never know if you should hate him or pity him must have.
Blood +
Vampires are a familiar theme. This Anime gives an original perspective on the concept. A girl is a murderer (vampire) born and kill everything and everyone down. Later they realize that its existence poses a threat to humanity and it appears to have a sister who must clean them out. The soundtrack was produced by Hans Zimmer.
Bakumatsu Kikansetsu Irohanihoheto
Behind this is an anime title complex lies primarily do a tremendously good atmosphere to put down. The soundtrack fits perfectly with the animation, the historical plot plays at the time of the Meiji restoration. The story is told on the basis of actual events. The hero is a taciturn guy who very well with a samurai sword can deal with.
Elven Lied
If you are a lot of blood, nudity and massacres of innocent citizens want to see, this is a must. A biological expiriment young girls has yielded dozens of opponents who mercilessly cut slices. That this poses many emotional trauma makes sense. The video speaks volumes.
Noir
Girls and guns is almost always a good combination. This anime is the story about two girls who form an elite assassination squads. A higher purpose awaits them, but it is doubtful whether they themselves are interested in participating. Occasionally, the story goes a bit slow, but the animation and music are masterly.
Neon Genesis Evangelion
An older anime and pretty hardcore psycho. The earth must be protected against alien threats, are special purpose robots can be developed only manned by young children.
Scrapped Princess
A very nicely drawn anime, about a princess who should not exist and would try her place on the demands in a world full of magic and fantasy.
Witch Hunter Robin
Witches are born at one time among men, people with special powers that they have no control. An organization was established to this witch hunt and thus to neutralize the risk.
Cowboy Bebop
Blues and spaceships are a risky combination. This series knows even a credible whole of it.

Violence, fast graphics and lots of action. Like it or should I say, although I do not like cartoons does.

I am of course for this kind of promotion.
You can almost not even the majority actually more like cartoon label, at least according to the Western concept like you said. There are those that arouse emotion in me more than the average feature film. Elfen Lied is a good example, which also proves that humor, psychological drama and horrific massacres well to combine.
The term includes both anime series and movies, manga is the collective term for all written work. Often the manga also differs considerably from another anime series, and fans can spend hours debating which of the two versions were better. It can certainly be worth it to see if your favorite straws also translated manga can be found, who knows, that there is a new dimension.

I have some of that mainstream anime look. Naruto I have fairly long sustained (up to episode 120 anywhere). One Piece I have also seen a few episodes and the same goes for Bleach. But that's not really my thing. In such Anime's is somewhat less depth and they are more aimed at children.
Hellsing and Gundam Seed Destiny, I have seen and all deserve a sufficient, but fell outside the top for me.
